Wine Country Cocktails Come to Montage Healdsburg Montage Healdsburg has unveiled a new cocktail program spanning its three dining venues: Scout Field Bar, Hudson Springs Bar and Grill, and the signature restaurant Hazel Hill. The menu features 23 cocktails, including seven nonalcoholic offerings, designed to pair with the resort's California cuisine. "We're excited to introduce a cocktail program inspired by our region of Sonoma that is meant to be paired with the impeccable dining experiences and flavor profiles created by our kitchen," says Steve Janicek, general manager of Montage Healdsburg. "Ultimately, the menu explores what it means to create exceptional cocktails in Wine Country."
Technical Sophistication The program showcases advanced bartending techniques. A Spinzall centrifuge clarifies two of 26 house-made syrups, while WonderFoam—an egg-free foam alternative derived from tree bark—adds texture to drinks like the Cyrus Sour, garnished with local florals and Earl Grey tea. Glassware design also plays a functional role: the PCH Martini is served in a narrow V-shaped glass designed to maintain temperature better than traditional wide-brim versions.
Signature Drinks Standout offerings include California Poppies, a savory vodka sour with acidified carrot juice and dill paired with pasta and richer meats; Smoky Rosa, which reimagines the mezcal tradition with freeze-dried strawberries, dried orange peel, pink salt and dark chocolate; and S'more to Drink, a modern espresso martini inspired by the resort's fireside traditions. Spirit-free options include Disappearing Coastline, crafted with verjus, housemade nonalcoholic vermouth and saline to evoke coastal character. Large-format communal cocktails such as Wild Roses—a delicate floral punch served over crushed ice and finished with the resort's estate-grown Surveyor Rosé—round out the menu.
