Fulton Market Bakery Expands to The Pass at Two North

Riverside Plaza Good Ambler, a Chicago cafe and bakery, has opened its second location at The Pass at Two North Riverside Plaza in the Loop, targeting commuters and office workers with quick-service breakfast and lunch offerings. The new spot will operate Monday through Friday, 6 a.m. to 3 p.m., and features an open-concept bakery with all items made from scratch daily and visible to customers through a glass wall.

Leadership and Credentials Executive Pastry Chef Meg Galus leads the

operation. A DeKalb native with French training, Galus is a three-time James Beard Awards finalist for "Outstanding Pastry Chef," won Jean Banchet's "Pastry Chef of the Year" in 2017, and was inducted into the Chicago Culinary Museum Chefs Hall of Fame in 2021. She previously directed pastry programs at TRU and BOKA, and spearheaded openings for Somerset, Momotaro, Swift and Sons, and the Park Hyatt Chicago.

Menu and Beverages Breakfast items include signature double chocolate croissants,

Kouign-amann, banana bread, and blueberry muffins. Seasonal specials feature a Rhubarb Toasted Coconut Cruffin, Asparagus Ricotta Twist, and an Herb & Gouda Scone. A new "Commuter Combo" pairs coffee with a pastry in a convenient carrier. Lunch offerings include soups, salads, croissant sandwiches, and housemade focaccia. Beverages come from partner suppliers: Hexe (drip coffee and cold brew), Rare Tea Cellars (iced and hot teas), and Freeman House Chai. The bakery also offers handcrafted chocolates, artisanal bonbons, small celebration cakes, and office catering services via mobile order-ahead.

The Operator's View Chef Galus emphasized transparency in her approach:

"We think it's important that we show our guests that everything in our bakery is made directly on-site and from scratch. We're very excited to bring that level of authenticity to the weekday crowds in The Loop." Bruce Finkelman, managing partner of parent company 16" on Center, framed the expansion within the collective's broader strategy: "Our goal is to create neighborhood concepts in cool, historic spaces, and that's certainly what we're doing with the new location of Good Ambler. We want to make our guests feel like they're part of a community, giving them a taste of some of the best chefs in Chicago."
